New Recipes!

You know that person who bookmarks or emails herself every recipe that looks yummy, and then just sits on them? Yeah, that's me.

But not today!! This morning when looking for something to cook for lunches this week, I looked in my "cooking" bookmark folder and pulled two to try!

The first - Cheese-free Stuffed Shells from vegetarian times. Super easy to make, pretty economical (extremely important these days), and from the little bit of filling i tasted, it should be good.
Now, instead of the traditional ricotta cheese, this recipe uses tofu. If that's not your thing  (I haven't told T what's in it, and i'm not going to until I hear "Lunch was really good!") then know that it doesn't taste bland. Really. With the added salt and spices, it really might as well be the ricotta- texture is the same.  (And, it's good for you!) 


Looks good, right? I subbed regular mozzarella cheese for their recommended fake cheddar "cheese"
So, that plus steamed broccoli is our lunch for the next 2 days. 

And then last week I somehow got on this blog that is so pretty...  And this was the recipe that I landed on. French Breakfast Puffs. Really simple, and quite tasty. I baked them for about 23 minutes. Nice and crumbly. Can't wait for breakfast* tomorrow.


*Breakfast is actually already made for the next 2 days, to ensure that we don't skip it. Scrambled egg, 1 slice of bacon (nitrate-free thank you very much), and some quartered mushrooms sauteed. Plus tea. Earl Grey (and never buy the Bigelow brand for Earl Grey. Buy Twinnings (yellow box). Trust me on this.)

  1. I love that site...do you have that font for Fresh? So pretty. Regarding the tea, don't get the HEB Earl Grey tea either...horrible stuff.
