Brie & Bacon Toasties

Near the train station in Edinburgh, there is a small shopping center with a little cafe. The first time Mom and I went, in '99, we stopped there for lunch, and it was there that we were introduced to brie & bacon toasties.

First, cook the bacon and heat up a skillet or sandwich press.
Goodness bacon looks disgusting while cooking. But oh, I love the taste. I could give up beef and chicken, but bacon and other pork products are just too good...

Slice up some brie and put it on your (healthy) bread. Melt some butter (don't use margarine, really!) for brushing on the bread.
Blot the grease off of the bacon, cut the strips in half and put on the bread. Brush the melted butter on the bread and place in the sandwich grill
(Looks good even before cooking...)

And cook until cheese is quite melted and bread is nice and toasty.
So not healthy, but so worth it. Serve with a salad.
